East mixes with West at Executive Chef Richard Chen’s Wing Lei, the signature Chinese restaurant at the Wynn Las Vegas (see). A graduate of the prestigious Culinary Institute of America in New York and more recently of Shanghai Terrace at the Peninsula Hotel in Chicago, Chen helped create the concept of “reverse fusion” in which Western ingredients are used to create traditional Chinese dishes. Chen offers an a la carte menu, a Five Course Peking Duck Prix Fixe Menu and a Chef’s Signature Menu. Signature favorites include pan-seared crab cake, lobster Dan Dan noodle, steamed stuffed poussin and braised veal shank. Wing Lei means “Future Prosperity” in Chinese and is also a rough translation of the name Wynn. This is a popular group restaurant and fills up quickly, so make reservations well in advance.
