Mall dining doesn’t get any better than Troquet, which effectively diverts attention from its location with an open kitchen, lots of artfully arranged flowers, and an elegant dark cherry wood bar. Another welcome distraction: the starters, which are so varied and substantial—the foie gras terrine and steak tartare with black olive tapanade among them—that they end up being “finishers” for some patrons. Main dishes, including the Niman Ranch pork chop with lavender-scented shell beans and the crispy veal sweetbreads, are innovative and exceptionally aromatic. A la carte and chef’s tasting menus are available daily, and the wine list offers ideal pairings for all parts of the repast.
