Considered to be Wynn's signature restaurant, its ambiance is open, expansive, airy but intimate, and highlighted by poolside views. Chef Mark LoRusso, renowned for “Haute American” dishes, mixes local ingredients with French flair. The appetizers are heavy on seafood, such as the Dungeness Crab Ravioli; Ahi Tuna Carpaccio; or Caviar service. The main courses include the sea, land and air with such temptations as the Crispy Skin Striped Bass with Mussel and Corn Chowder, the Roasted Colorado Rack of Lamb with Goat Cheese Soufflé and the Organic Roasted Chicken with Corn Pudding and Summer Truffles. Also offered is the Chef’s Tasting Menu (available in a Vegetarian version) which changes often.
