Light and airy, mostly white with a red wall here and a brick one there, a bar that has remnants of the 1950s, a kitchen open to view, and servers who seem unperturbed no matter what the request, Strings is like no other restaurant in Denver. The locals know it. So do scores of celebrities and politicians visiting the city, many of whom have left autographed pictures on the wall. Some love it for the unusual “eclectic American/Continental/Italian” cuisine. Others are admirers of owner Noel Cunningham, a well-known humanitarian who constantly holds fundraisers at the restaurant to help fight illiteracy and hunger. Even when he is not on the premises, servers say his philosophy is in evidence as they point to a huge mural of lines and squiggles over a line from Robert Frost’s poem The Road Not Taken: “I took the one less traveled by, and that has made all the difference.”
