If you're not put off by seeking fine dining amid the carnival atmosphere of Circus Circus, The Steak House rewards your lack of pretension with high quality at reasonable prices. The 21-day-aged cuts of beef—New York strips, sirloins, porterhouses, and filets—are displayed amid the wood-paneled dining room and then charcoal-broiled in an exhibition kitchen. Portions are large, and many of the sides—potato, vegetable, and salad—that other meateries list á la carte are included in the price of a steak. Normally open only for dinner, a champagne brunch each Sunday offers three early to midday seatings.
