Other guests come for the wonderful live piano, offered nightly. But truth be told, the food is Splendido’s biggest draw, and for good reason. The menu is upscale and eclectic, merging ingredients from around the world with those of Colorado’s native soil. Flavors balance, sauces glisten, and the mouth is treated to a magnificent meal. You’ll be hard pressed to find a dish here that does not impress even the most discerning diner. The menu changes nightly, but seasonal signatures have included dishes like sesame-crusted Atlantic salmon with coconut basmati rice and cilantro-lemongrass sauce and grilled elk loin with braised elk osso buco.
