The Four Seasons Resort in Palm Beach reopened its signature restaurant in September 2006 after a massive renovation of the decor and menu. The new contemporary and tropically-inspired dining room gives every seat an ocean view. The menu melds the flavors of the South, the Caribbean and Central and South America, and comes in prix fixe versions with three, four and five courses. Appetizers include such creations as jumbo lump crab with alligator pear, golden tomato coulis and crispy potato lace, while entrees can include black duck foie gras with wild rice, passion fruit and baby root vegetables. A few Palm Beach classics remain from the previous menu, including the chateaubriand for two.
