Your luck may run out at the tables, but it will be amply rewarded at Prime in the Bellagio. Modeled after a 1930’s Speakeasy, the plush drapery and powder blue marble set the stage for some of the best prime meats, seafood and chops. To compliment the food, Prime manages one of the most impressive wine collections in the city, focusing on hearty reds from California and Bordeaux. Under the direction of Chef Jean-Georges Vongerichten, Prime offers a selection of appetizers and main courses that are not necessarily ‘standard steakhouse’ fare. Although steaks are their bread and butter, don’t discount the Veal Chop with Kumquat-Pineapple Chutney and Caramelized Cauliflower or the Seared Tuna au Poivre with Wasabi-Mashed Potatoes. To compliment the delicious aged steaks, plenty of sides are offered, including the Gingered Sweet Potatoes, Truffled Mashed Potatoes, and Roasted Root Vegetables.
