Chef de Cuisine Andrew Springett’s menu focuses on the bounty of locally grown organic produce and of course, seafood from the surrounding waters. Several dishes on the menu are inspired by the Ancient Cedars Spa, and are appropriately lighter in style, but definitely not on taste, with delicious options as the Dungeness Crab Salad or Wickaninnish Potlatch. The wine list offers a generous selection of options from British Columbia and the nearby Pacific Northwest. The adjoining On the Rocks Bar & Lounge is a perfect spot for a pre-or post-dinner cocktail, with a variety of wines by the glass and an extensive selection of single-malt scotches.
