Chef Joachim Splichal, famed for Patina in Los Angeles and Pinot restaurants throughout California, runs the very French (with California bistro highlights) Pinot Brasserie in the otherwise very Italian Venetian (see). Brass rails, crimson and mirrored walls, and wood ceilings cover the design end of evoking Paris. The kitchen does the rest, with foie gras and apples, roast rabbit, and coq au vin.
