Menus that roam the perimeter of the Mediterranean are nothing new in the Boston area, but few chefs coax out the Arabic influences on Mediterranean bistro fare as well as Oleana’s chef/owner Ana Sortun. To create a luscious, complex style, Sortun gleefully matches Arabic almonds to the herbs of Provence in a chicken dish. The food is always comforting, yet often as surprising as a Basque-influenced venison with caramelized turnip or a rabbit and mushroom paella salad. Regulars would revolt if she removed the scallops with basmati-pistachio pilaf from the menu. The fireplace offers cozy comfort in the winter, while an outdoor patio beckons in the summertime.
