“Mosaic” is an appropriate name for this restaurant for a number of reasons. Not only is the work of different local artists showcased in the dining room every three to four months, but the cuisine presents diners with a veritable mosaic of flavors. Chef/owner Deborah Knight uses ingredients and cooking techniques from around the world to create her own brand of eclectic cuisine, which has included dishes such as Louisiana spiced prawns, Thai shrimp and coconut soup, and fennel and pesto risotto. Three types of five-course tasting menus are available to suit all tastes: the Mosaic tasting, which offers a bit of everything; the Ocean tasting, highlighting seafood; and the Vegetable tasting, where vegetarian diners will find the likes of tofu, pasta, and, of course, vegetables. The local artwork punctuates the earth-toned dining room with color, and a beautiful, custom-made mosaic floor adds sparkle.
