Regional American fare is served with understated elegance at the Boulders Resort’s Latilla Room, a glass-walled space tucked into the Sonoran Desert and surrounded by 12-million-year-old granite boulder formations. The menu here uses only fresh, organic produce, free-range meats and poultry, and responsibly caught seafood from clean waters; most of the wines are also organic. The rustic, cozy dining room is decorated with Native American weavings, and, as its name suggests, the main room’s ceiling is crafted from Ocotillo branches (called latilla, which means “little sticks” in Spanish).
