Chef de Cuisine Joseph Trevino is responsible for the menu at Dux, located within the Mobil Four-Star award-winning Peabody Hotel. Elegant and regal are words that come to mind when experiencing the ambiance of the dining room. Warm gold and brown hues invite while the Travertine floors, massive columns and crystal chandeliers remind that this is a superior dining environment. Trevino’s menu does not disappoint nor does it allow for devotion to dieting. The menu changes seasonally but emphasizes both seafood and meats equally. Favorites include the warm lobster and potato salad; sheep’s milk ricotta ravioli; California halibut as well as the Berkshire pork tenderloin. Dux the restaurant derives its name from Ducks, the fowl. During the mornings and afternoons, a trained procession of ducks march to and from their $100,000 Peabody duck castle, walking across the red carpet in the hotel lobby. Dux provides each of its guests a red carpet experience for every meal.
