Laurent Tourondel’s BLT (Bistro Laurent Tourondel) Market in the Ritz-Carlton hotel is a valentine to all things local and seasonal and another star in Tourondel’s constellation of restaurants that includes BLT Steak and BLT Prime. Diners feast on peak-season ingredients, like spring’s morel-and-English-pea risotto with snails and goat cheese, in a spotless farmhouse-like setting adorned with produce-themed artwork. The foie gras comes from Hudson Valley Foie Gras, while Jamison Farm provides the lamb, and nearly all of the vegetables come from farms nearby. The locally produced-goods theme is inspiring yet cloying, but with food that’s anything but, who cares?
