That philosophy is translated in the colorful Native American weavings, petroglyph-inspired art upon the walls of beautiful rock, and mesmerizing fires that crackle and warm the rooms within this dining favorite. Executive chef Tom Kerpon devotes himself to inventive uses of locally grown, organic products, from cactus and sage to chiles and corn. Plenty of satisfaction is found in his grilled basil-marinated opah with green chile risotto, buffalo osso bucco, and soup of grilled corn, tortilla, and lime.
